Sweet Potato Noodles with Lobster

 

How to re-create this recipe:

Ingredients:

(serves 2)

Putting it together:

  1. Soak noodles in water for 30 minutes.  While noodles are soaking prepare vegetables: Into thin strips slice the onion, shiitake mushrooms, snow peas, and carrot. Set aside.
  2. To make the sauce: Mince the garlic cloves and put into a small bowl. To that same bowl add the soy sauce, sriracha, sugar,  and whisk in 1 tbsp of sesame oil.
  3. After 30 minutes remove noodles from water and set aside (add a tiny amount of oil to prevent them from sticking together). Set a oven (or toaster oven) on broil and season lobster tails with salt and black pepper. Broil the tails for 4 minutes. Set aside and keep warm.
  4. In a Large saute pan, add 1 tbsp of sesame oil and stir fry onions for about 3 minutes on medium heat. Add the rest of the vegetables and continue to stir fry for about 3-4 minutes until they are slightly softened. Add the noodles and the sauce and continue to stir fry for another 2 minutes. Turn off heat.
  5. Chop up lobster tails into large chunks and add noodles to a nice round plate or bowl. Top with lobster tails and micro greens for garnish.

Sweet potato noodles can be a a nice alternative to traditional pasta and for those in need of a gluten free dish. These noodles do not contain any fat and have a pleasant chewy texture. Lobster contains a good amount of protein, Vitamins A, B-12 , E, magnesium, zinc. It also contains Omega 3 which is helpful in reducing depression.

Tips when cooking:

Sweet potato noodles are very versatile. You can toss whatever vegetables you prefer into the stir fry. Chicken, beef, shrimp are other proteins that can be used.
