Baked Delicata Squash

Delicata Squash

How to re-create this recipe:

Ingredients:

(Serves 2-4)

  • 1 Delicata Squash
  • Good quality Olive Oil
  • Salt and Black Pepper

Putting it together:

  1. Pre-heat your oven to 375 degrees Fahrenheit and line a sheet tray with parchment paper.
  2. Rinse off the Squash and dry it. Using a sharp knife, slice the Delicata Squash into about 1/2 inch width slices. Taking a small spoon (preferably a grapefruit spoon), core the center of the slices out in a circular motion to remove the seeds and  pulp.
  3. Lay them on your sheet tray, drizzle the Olive Oil all over them and season with Salt and Black Pepper.
  4. Bake in the oven for about 15 minutes. After 15 minutes turn each of them over and bake for an additional 5 minutes.

Nourishment for your body: Delicata Squash is a type of Winter Squash. It is good for you because it’s high in fiber,  vitamins A and C, low in carbs, contains Calcium, Potassium, and Folate.

Tips when cooking: This squash has a pleasant texture and it’s flavor is described as a cross between corn and pumpkin.The skin of the Delicata is thin so there is no need to remove it before cooking it. It’s perfectly edible. Cutting it this way makes for a beautiful presentation because the slices are reminiscent of flower petals. It is delicious both at room temperature and served hot.

Dragon Bowl Vitality bowls

This is called a “Dragon Bowl” and you can find it at Vitality Bowls-Superfood Cafe. Buckwheat Stir fry with Rainbow Chard and Dates

Buckwheat stirfry

How to re-create this recipe: 

(Serves 4) 

  • 1 cup of water
  • 1/2 a cup of dried roasted Buckwheat (Groats)
  • 1 Tbsp of Red Palm Oil
  • 1 Orange Bell Pepper
  • 1 bunch of Rainbow Chard
  • 1 yellow or white onion
  • 6 Pitted Dates
  • 4 Garlic Cloves
  • 1 Tsp of Cumin
  • 1/2 a Lemon
  • Salt and Black Pepper to taste

Putting it together: 

  1. Bring 1 cup of water to a boil (add some salt), reduce heat and simmer 1/2 a cup of Buckwheat for about 15-20 minutes (until water evaporates).
  2. Prep your other vegetables by small dicing your onion, mincing your garlic cloves, small dicing your Bell Pepper, slicing your pitted dates and slicing your Rainbow Chard into long strips.
  3. Pre-heat a Saute pan on medium high heat and add your Tbsp of Red Palm Oil to that. Add your garlic and let that infuse into the oil for about 2 minutes. Add your Onions and cook them until they are slightly caramelized (about 10 minutes). Add your Bell Peppers, sliced Dates, and Rainbow Chard  and cook for another 5 minutes until both the peppers and Rainbow Chard are softened. Add a generous amount of salt and black pepper to taste as well as 1 Tsp of Cumin and squeeze half a lemon on top.
  4. Add your cooked Buckwheat and Saute for another 2-3 minutes. Add some more salt and black pepper to taste.

Nourishment for your body: Buckwheat (also known as groats) is a seed that is high in protein and fiber. It is also Gluten free. It is known to improve heart health, may prevent diabetes, and is packed with vitamins and minerals.  Dates  come from the tree of the Date Palm Tree which grows in many tropical regions. They are a great natural sweetener and add a slightly chewy texture. If you eat them as a snack, it can satisfy your sweet tooth while providing you with antioxidants, fiber and potassium. Besides the beautiful color combination, Rainbow Chard is renowned for its high content of vitamins A and K. It is also packed with fiber, iron and full of antioxidants that will protect your body against potential diseases such as heart disease, diabetes, and some neurological conditions.

Tips when cooking: Dates can be used as an alternative to Maple Syrup or Honey. You can add them to pretty much anything for added sweetness; From smoothies to a stir fry dish with a grain or rice of your choice. Matcha Green Tea, Ginger And Mung Bean Patties

Green tea, Ginger and Mung bean patties

How to re-create this recipe:

Ingredients:

(Yields 12 patties)

  • 225 grams Dried Mung Beans
  • 250 grams flour
  • 225 grams plain non-fat yogurt
  • 200 grams Soy Milk
  • 200 grams Agave syrup
  • 30 grams Fresh Ginger
  • 10 grams Match Green Tea Powder
  • 1 tsp of Baking Soda
  • 1 tsp of Baking Powder
  • Pinch of salt
  • Powdered Sugar for dusting (optional)

Putting it together:

  1. Pre-heat your oven to 300 degrees Fahrenheit. Fill a small pot halfway with water and bring it to a simmer. Simmer the beans for 1 hour.
  2. While the beans are cooking grate 30 mg of ginger and measure out all your ingredients. After the beans are cooked, drain them and cool them down.
  3. In a medium mixing bowl, mix together the flour, baking soda, baking powder, Match Green tea powder  and a pinch of salt.
  4. In another mixing bowl (preferably a standing mixer), mix together the yogurt, soy milk, agave syrup and chopped ginger.
  5. Add the dry ingredients to the wet ingredients and mix to a smooth paste. Fold in the Mung beans.
  6. Lightly grease (with butter) a Muffin pan that can hold 12 muffins, and fill each muffin mold to the brim with the mixture.
  7. Bake for 25 minutes.
  8. After they are baked, allow them to cool in the muffin pan for 5 minutes and then transfer the Patties to a cooling rack. Dust them with some powdered sugar.

Nourishment for your body: Mung Beans are high in protein and fiber. They contain Folate, Manganese, Magnesium, Phosphorus, Iron, Potassium, Copper, Zinc , Vitamins B1, B2, B3, B5, B6 and Selenium.

He was the founder of one of the greatest Franchise’s to ever hit the U.S. He founded Le Pain Quotidien and this recipe is one of many great recipes that you can find in his cookbook “Communal Table…Memories And Recipes.” Mung Beans are a versatile ingredient that are typically found in Chinese, Filipino and Indian dishes. Bean Sprouts come from Mung Beans. They can be used in soups, stews, dips, salads, made into spicy fritters, and even desserts.

How to re-create this recipe:

Ingredients:

(Serves 2-3)

  • 4 Eggs
  • 1 container of Kumato Tomatoes
  • 1 pint of mixed Cherry Tomatoes
  • 1/4 cup of Parsley
  • 1/4 cup of Pine Nuts
  • 1 Tsp of Fennel Seeds
  • 1 Tsp of Cumin Seeds
  • 1/8 of a Tsp of Red Pepper flakes
  • 2 Garlic Cloves
  • Spelt Tortilla Wraps (optional)
  • Salt to taste

Putting it together:

  1. Pre-heat a skillet pan on medium heat and add your Pine Nuts, Fennel Seeds and Cumin Seeds. Stir this mixture frequently until they are slightly browned and a rich fragrance is given off. Remove from heat.
  2. Pre-heat a deep saute pan on medium heat. Cut your garlic cloves into thin slices and chop up all your parsley.
  3. Rinse all your tomatoes off and cut the Kumato’s into medium sized chunks. Slice the cherry tomatoes in half and add all these tomatoes to the pan with the garlic. Let the tomatoes cook down until their skins look wilted and the tomatoes are all softened (about 10 minutes or so).
  4. Add all your toasted seeds, pine nuts, parsley and red pepper flakes and continue to cook the tomatoes for another 5 minutes with the lid on.
  5. The last step is to crack 4 eggs directly into this mixture, evenly spaced apart. Make a little pocket for each of them in the tomatoes before cracking them in. Cover with a tight fitting lid and cook until they appear poached and the egg whites are fully cooked through (about 5 minutes).
  6. You can pair this dish with toasted Tortilla wraps, bread or crackers. Its great for dipping in the sauce!
